Hot Chicken Grape Curry Over Toast

Ingredients:
  • 3 oz drained and rinsed chicken
  • 6 grapes cut into quarters
  • 1 celery stalk, thinly sliced
  • 1/2 tsp  curry 
  • dash Stevia
  • 1/3 c non-fat Greek yogurt
  • 1 TB yellow or dijon mustard
  • 2 TB chopped walnuts
  • handful of sprouts
  • sliced hard-boiled egg
  • 1 pc low sodium Ezekial bread, toasted
Preparation:
Stir together yogurt, mustard, curry, and sugar. Fold in chicken, grapes, walnuts, and celery. Toast bread. Smother with curry mix. Top with sprouts and sliced hard-boiled egg.
