Hot Chicken Grape Curry Over Toast
Ingredients:
- 3 oz drained and rinsed chicken
- 6 grapes cut into quarters
- 1 celery stalk, thinly sliced
- 1/2 tsp curry
- dash Stevia
- 1/3 c non-fat Greek yogurt
- 1 TB yellow or dijon mustard
- 2 TB chopped walnuts
- handful of sprouts
- sliced hard-boiled egg
- 1 pc low sodium Ezekial bread, toasted
Stir together yogurt, mustard, curry, and sugar. Fold in chicken, grapes, walnuts, and celery. Toast bread. Smother with curry mix. Top with sprouts and sliced hard-boiled egg.
